The griddle features four U-shaped steel burners rated at 30,000 BTU each, totaling 120,000 BTU of combined output. Thermostatic controls allow adjustment from 200°F to 500°F in 50°F increments, giving kitchen staff precise heat management across the full 47.8-inch wide by 22.45-inch deep polished stainless steel cooking surface. The 1-inch-thick stainless steel griddle plate retains and distributes heat evenly across the cooking zone.

The unit connects to a natural gas supply via a 3/4-inch NPT nozzle and ships with a gas regulator included. Pilot ignition starts the burners reliably during service. A stainless steel grease tray and drip tray manage grease runoff, while fiberglass nylon knobs resist heat at the control panel.
