The Coldline 59-inch Pizza Prep Dough Retarder Table is a dual-function refrigerated prep station designed for commercial kitchens in pizzerias, restaurants, and high-volume food service operations. It combines a main cabinet refrigerator with a separate refrigerated glass topping rail, giving kitchen staff dedicated cold zones for dough retarding and topping management at a single station.

The unit measures 31.5" (D) x 59.4" (W) x 56" (H) and holds 15.1 cubic feet of interior storage across a stainless steel interior space of 26.75" deep x 41.5" wide x 22.62" tall. Two solid doors provide front access to the main cabinet, which is supported by two epoxy-coated steel adjustable shelves with a shelf size of 16" W x 24.8" D each. The cabinet holds up to six 1/3-size pans, and deep stainless steel pans are available separately. Foamed-in-place polyurethane insulation supports stable holding temperatures between 33°F and 40°F, with automatic defrost handling routine ice buildup.

Temperature is managed through an electronic control system with a digital temperature controller, allowing kitchen staff to monitor and adjust conditions directly. The main refrigeration circuit uses an R-290 refrigerant with a 1/4 hp compressor, while the refrigerated glass topping rail runs on a separate R-600a refrigerant circuit with a 1/6 hp compressor. Both refrigerants are low global warming potential options. The marble top surface and a 69.5" W x 16.2" D cutting board offer a practical prep surface alongside the topping rail.

Mobility is supported by four 5.5-inch casters, two of which include brakes for stationary positioning during service. The unit operates on 115V, 60 Hz, single-phase power via a NEMA 5-15P plug, making it compatible with standard commercial kitchen outlets.
